To escape spaces in a UNC path in Outlook, and perhaps elsewhere, use angle brackets around the address. Ok, it's not really escaping, but I don't know a better word. Syntax? Delimit? Marking? Denoting?
E.g. If you enter: <\\server\company\Company Forms>, Outlook will automatically create a proper, working link to the file.
This probably works in Microsoft Word and other Office products too.
